Sweet Potato & Peanut Butter soup
1 Large Onion (chopped)
3 Cloves Garlic (chopped)
1 Red Pepper (chopped)
2 Large leeks (trimmed)
1 Large Sweet Potato (cubed)
2 tbsps. Natural Peanut Butter
2-3 tbsps Vegan Bouillon
- Fry the onion, garlic and leeks in a large pot until soft.
- Add the sweet potato & red pepper and fry for a further 3-4 minutes.
- Add the vegan/vegetable bouillon and enough water to cover all the vegetables in the pot.
- Bring to the boil, then reduce the heat and simmer for 15 minutes.
- Stir in the peanut butter and simmer for a further 5 minutes.
- Blend and serve
