Spicy Pulled Carrot & Chickpea Salad

(For the purposes of this recipe, i'll stick to how to make the spicy pulled carrot part - you can decide whether to stick it in a bun or add some chick peas and get creative with a salad!)

Step One

Add the following to a frying pan on a medium heat:

  • 2 grated carrots

  • 2 cloves chopped garlic

  • 1 sliced onion

  • a handful of finely chopped kale

  • dash of your fave oil

  • tsp paprika

  • tsp cumin

Step Two

Fry it all until really soft!

Step Three

Mix the following in a bowl:

  • 2-3 tbsp of sweet chilli sauce

  • juice of half a lime

  • 1-2 tbsp of your fave soy sauce

  • 1 tsp of chilli flakes

Step 4

Stir the sauce into the grated carrot mix & BOOM! 

Serve with chickpeas & salad, pop into your favourite burger bun or whatever you feel like! Enjoy!
