(For the purposes of this recipe, i'll stick to how to make the spicy pulled carrot part - you can decide whether to stick it in a bun or add some chick peas and get creative with a salad!)
Add the following to a frying pan on a medium heat:
2 grated carrots
2 cloves chopped garlic
1 sliced onion
a handful of finely chopped kale
dash of your fave oil
Fry it all until really soft!
Mix the following in a bowl:
2-3 tbsp of sweet chilli sauce
juice of half a lime
1-2 tbsp of your fave soy sauce
1 tsp of chilli flakes
Stir the sauce into the grated carrot mix & BOOM!
Serve with chickpeas & salad, pop into your favourite burger bun or whatever you feel like! Enjoy!
