Chunky Roast Carrot Hummus

Is it hummus if there are no chickpeas? It is if you’ve just done your shopping, forgot chickpeas, and used kidney beans instead. 

First off, let me say that i'm a massive fan of hummus! I genuinely make it more often than I make the bed in the morning, but rarely have I made it and been quite as excited as this. 

I enjoy it as a dip for salad vegetables, on top of homemade burgers or with some wholemeal pitta as a snack, it’s a wonderfully versatile accompaniment to any main dish and almost reminds me of the stuff Robocop was fed back in the original.

Quite frankly if you can make nicer hummus than this then you’re a special individual indeed. 

Adapted from the amazing folks @ Happy Pear, try this with some thinly cut peppers for dipping.

Ingredients:

1/2 400g tin of chickpeas or kidney beans
2 cloves of garlic
2 tbsps of Tahini paste
3 large carrots
4 tbsbs of olive oil
1 tsp of ground cumin
Some water if needed

How to:

  1. Thinly slice carrots, add a drizzle of olive oil (2tbsps) and roast in the oven for 20-25mins.
  2. Add the carrots & all other ingredients to food processor and whiz until it reaches your desired consistency. (I prefer just a short blitz so it remains relatively chunky.) 
  3. Serve & enjoy. (Preferably with others as you will eat it all if you don’t.)
