Just a quick and simple salad idea for National Vegetarian Week...
- First I boiled some quinoa (I used a mixture of red & black) in a small pot until it had a little bite but was cooked through. Took around 15 minutes.
- While this was boiling I chopped some garlic, red onion, yellow pepper & sweet potato & drizzled with a little olive oil and placed in the oven (coated in paprika & cumin) on medium heat for 20 minutes, turning occasionally.
- I chopped a fairly large helping of Feta cheese (I love Feta) and added to all the cooked ingredients in a large mixing bowl.
- For the dressing I mixed equal parts, olive oil, balsamic vinegar, and 2 tsps of manuka honey & stirred through.
