Protein rich coconut pancakes

Post workout treat today - coconut flour & whey pancakes, topped with Skyr Icelandic yoghurt, peanut butter, cacao & banana. 

Super simple how to:

(excuse the lack of amounts but I used the l'il bitta this l'il bitta that approach to make the mix)

  1. I Added about 3 scoops of whey protein (I used vanilla flavoured) & equal amounts coconut flour.
  2. I then added almond milk sloooowly while whisking the mix until it become relatively thick with few "bits"
  3. I then fried in a little coconut oil on medium heat and flipped when the bottom had fried solid & the surface was almost cooked through.
  4. I then got inventive and chucked the rest on top 😜
